A delicious, yet simple winter warmer!
Serves 6
Ingredients
- 1kg Shin of Beef
- 2 tbsp Olive Oil
- 2 White onions, roughly chopped
- 2 sticks celery, roughly chopped
- 2 carrots, peeled and roughly chopped
- 4 cloves garlic, roughly chopped
- 2 tsp cumin
- Dried chilli flakes (to taste)
- 150g diced british chorizo
- 400g tin of chopped tomatoes
- 500ml dark ale
- 2 beef stock cubes
- Few squares of dark chocolate
To Serve
- Fresh corinader
- tub sour cream
Here’s how to make it:
- Turn your slow cooker to high
- Place onions, celery and carrots into slow cooker
- Add chorizo and garlic
- Lay thin slices of shin beef on top of the vegetables and chorizo
- Add in the dried chilli flakes and cumin. Add in the stock cubes, tinned tomatoes and dark ale
- Leave to cook, on high, for 8 hours
- When the beef is cooked, stir through the dark chocolate and serve with fresh corinader and sour cream
